There’s nothing better than a sweet and frosty cocktail when it’s hot outside. I know I’ll be making this version of a piña colada all summer long!
1 ½ cups light coconut milk (carton is generally lower calorie/fat than canned)
¼ cup unsweetened coconut flakes
1 cup pineapple
1 frozen banana
1 tsp vanilla
½ cup crushed ice
pinch of salt
sweetener to taste (optional)
3/4 cup rum
– Combine all ingredients in a blender. Add ice or
milk to adjust consistency to your liking.
