Peanut brittle is a classic favorite! Here’s a recipe I found that you don’t even need your stove for!
1 1/2 cups raw, shelled peanuts
1 cup sugar
1/2 cup light corn syrup
1/8 tsp salt
1 tsp butter
1 tsp vanilla extract
1 tsp baking soda
Generously butter a cookie sheet and set it aside
In a 2 qt Pyrex or microwave safe dish, add raw shelled peanuts, sugar, light corn syrup and salt
Microwave on high for about 5 minutes
Remove dish from microwave and add butter and vanilla extract (Be careful as dish will be very hot)
Stir until well blended
Microwave for an additional 2 minutes or so or until the mixture takes on a light brown brittle color
When the mixture gets to the desired stage, remove from microwave and add baking soda
Stir quickly. The mixture will become light and foamy
Quickly pour mixture onto the buttered cookie sheet and spread it into a thin layer
Let cool and then break into pieces to serve
Store in an air-tight container
You work too hard for your money to throw it all away on full price when you don't have to!
